Champagne Mojitos


Mojitos are one of my favorites. So is champagne. Put them together and yum. This drink is perfectly bubbly with the great traditional mojito flavor. Make this the next time you host brunch, celebrate a bridal shower (yes, I have wedding brain...the countdown is finally into the double digits!), or just have extra limes hanging around. For me, here's the list of things I was celebrating when I made this spring-y cocktail:
  • It's feeling like spring! The birds are chirping and the windows are open (slightly)
  • Iced coffee season is here. Enough said.
  • The Madison farmer's market is only a few weekends alway
  • Honeymoon is all planned 
  • Oh and I got a new job!

This recipe is super easy but the champagne gives it a special feel. The original recipe from Food Network suggests using cava, which I used and liked. But, I don't think using a different kind would be a deal breaker. Go ahead, get creative!

Ingredients
1/4 c. fresh mint leaves
2-3 Tbsp. sugar
1 lime, cut into wedges
1 c. rum
1 bottle chilled cava

Instructions
1. Put mint, sugar and lime wedges into a pitcher and muddle
2. Stir in rum
3. Strain into chilled glasses and top with cava
4. Enjoy!

Brittany's Sunday Brunch

Good morning brunchers!

This time of winter, I always find myself bored. Bored of snow and cold and being cooped up. Luckily, the kitchen can help me stay busy. One of my favorite things to make in the kitchen lately is homemade dog treats for Bear and friends...because one batch makes like 40 biscuits! Bear doesn't need all of those. But he sure wishes he could have them all. He'll do just about any trick for one of those peanut butter goodies. I always crave peanut butter cookies after making these because they always make the place smell so good when baking. Click here for the recipe I use.


Another thing I find myself doing during the boring months of winter is puzzles. My fiancé and I love to spend time after work or weekends at our dinning room table putting together the big, tough puzzles. That's actually how we spent our Valentines day. It was a perfect day in with a puzzle and grilled cheese and tomato soup for two! Simple, cheap and comfy. Oh, and I told my fiancé to hold off on buying me flowers. He'll (we'll) be spending plenty of money on flowers for the wedding. But I still got a lovely orchid. I'm diligently adding 3 ice cubes every Friday and giving her great sunlight. Let's just say I don't have the greenest thumb but I'm trying super hard! So far so good.


One other thing that's kept me busy this winter is the wedding planning. I've been a little stressed just with the idea that it's only 4 months aways! Yikes, where has the time gone? I'm pretty sure I'm ahead of the game but I don't want to start slacking. Bakeries, invitations, bridal gifts, salons...you can see how you might forget something. Through all this planning craze, I stepped aside and thought how I need to pamper and prepare myself for the big day.

I decided to look into grown-up facial regimens. I have stuck with the high school schedule of washing my face am and pm and only using moisturizer when my face gets dry. I wanted to change that in hopes of getting a good routine down for the wedding and beyond. It took quite some time and research to find the right products but I think I found them. I went with ole henriksen because they steer clear of ingredients I'm allergic to, they got good reviews and they are not on the top of the price scale. I'll let you know how I think of them!


And although no one but my yoga mat will see my pretty toes, I treated myself to a DIY pedicure. I did this as a pampering reward after sticking to my work out plans for the week. It was a great alternative to my normal rewards, dessert! Although, I'm not completely ruling out desserts until the wedding, after all, we get free cupcakes at our bakery tastings!

One XL Chocolate Cookie



Have you ever had that deep craving that just won't go away? Especially when you're right in the middle of the week feeling great because you've worked out and eaten healthy? But that craving just keeps creeping in until you finally beg your fiancé to go get frozen yogurt? Unfortunately this happened to me (not unlike any other week) AND I got a disappointing answer from the fiancé. I get it, it's the middle of winter so who really wants a cold dessert. I was just looking for something on the less unhealthy side and something that would be one and done.

You see, I'm not the liker of the cake/cookie/brownie in a mug. That would be a good one and done dessert. But, they are unsatisfying to me. Am I crazy or have I just not found the right recipe yet? Anyway, I wanted something super good and satisfying to kick this craving to California. So, I knew the recipe needed to use the oven and eggs. But I didn't want a dozen and a half cookies or bars staring at me all week, asking to be eaten. One and done, guys, one and done.


This recipe does it all for me! Super quick and all the ingredients are already in my kitchen. The cookie was soft but had a crunchy outside, my favorite! And the chocolate flavor was perfect! I shared this bigger than I was expecting cookie with my fiancé. And I'm planning on making this again for Valentine's Day! It's a fun and special dessert just for two (or one, we're not judging!). Plus, no leftover dessert to crave over the next day, perfect for me and my fiancé who are trying to get into wedding attire shape :)


Slightly adapted from Sally's Baking Addiction

Ingredients
2 Tbsp. room temperature butter
2 Tbsp. granulated sugar
2 Tbsp. light brown sugar
2 Tbsp. beaten egg
1/2 tsp. vanilla extract
1/4 c. all-purpose flour
2 Tbsp. unsweetened cocoa powder
1/2 tsp. baking soda
Pinch of salt
1/4 c. chocolate chips

Instructions
1. Preheat oven to 350F degrees. Line a baking sheet with parchment paper.
2. In a medium sized bowl, cream the butter and sugars with a fork. Mix in the egg and vanilla.
3. In a separate small bowl, add flour, cocoa powder, baking soda, and salt. Pour into wet ingredients bowl and combine with fork. Fold in chocolate chips.
4. Mold dough into a ball and place in the center of the baking sheet. Bake for about 15 minutes.
5. Enjoy warm with your bestie or all by yourself!

Brittany's Sunday Brunch

Happy brunch everyone!

With the snow storm out my door, I'm really loving the couch and my blanket right now. It's the perfect weather to cozy up by a fire and shamelessly binge watch Sherlock. Ah, one of my favorites!


This weekend I had the pleasure to sit in front of a real fire at my soon-to-be in-laws. We just have a convenient switch-on gas fireplace, which is awesome, don't get me wrong. But sometimes the smell and ambiance of a real fireplace can't be beat. It was a so relaxing.


It's funny to think planning a wedding could be so tiring and stressful. But it is! I'm not trying to complain, because on top of being stressful, it is fun! Last weekend, we FINALLY found flower girl dresses! They were at this store that was connected to Grapevine Cafe in Green Bay. Go if you have the chance. Their caramel macchiatos are amazing, their food is great and I just loved the atmosphere! It was quiet an adventure to find these dresses because we need two dresses to fit a 1 year old and an 8 year old. Not many styles of dresses come in that range of sizes, but we did it! We found a dress to fit both! Woohoo! And on top of that, we found my veil! I never thought the veil would be so important to me. Through the process, I realized I will only wear a veil once. And for me it really made me feel like a bride.

Since we're finding out quickly how expensive this celebration of our nuptials is going to be, we aren't really planning on anything for Valentine's day. But I did get an email for Bluephies' "Broke Ass Date Night" special they're doing. We may just have to go for a bottle of wine and half-off apps. Yum.

Brittany's Sunday Brunch

Wow has 2015 taken off quickly! I started a new tradition for myself this year. You see, I love to be organized and one of my favorite things to satisfy my ultra-organized self is to have a calendar. Hard copy. Actually two hard copy calendars, one small sized that I take to work and can fit in my purse. The other one is large, hanging on the closet door near our kitchen. That one is more of a reminder for the fiancé. But lets be honest, I'm probably the one who looks at it most. 

But lets get back to my new tradition. So, when I change over to the new year calendar, I take a look at all the events and things written in my calendar from the past year. It really reminded me how great 2014 was. A lot of the things were wedding related. Our engagement photo session and officially reserving our wedding venue were among the pile. We also had a wedding in the family which was so much fun! Reflection is good. A reminder of what a good life I live. I'm pretty luck.

Looking into 2015, I can only guess it's going to be better than 2014! After all, I FINALLY get to marry my best friend! We just hit our 2 year mark...of being engaged (and have been together much longer). I just can't wait to say, "I do!" Here are a few other things I hope to accomplish in 2015:
  • Look and feel amazing on my wedding day. I'm very motivated to work out and eat healthy, with the help of some great workout buddies!
  • Finally tackle pastries. I hear you need patience and days to make these babies. 2015 is the year...but maybe after the wedding (see first bullet).
  • Never forget to snuggle my fur baby, Bear! That one should be easy.
  • Not to forget to slow down, make myself/go out to get a drink now and then. Getting a cocktail is an easy way to catch up with friends and take a moment away from the stress of life

Cowboy Skillet Chicken


The super cold weather has set in, leaving me drinking hot chocolate with a fire going as I write this post. Sure I love to snuggle with a blanket and have a fire going, but isn't this a bit too cold? I mean -11, seriously Madison, WI? This cold weather has got me thinking about the warm summer months where the best part of the week is the Farmer's Market! I had first made this recipe over the summer with green beans and fingerling potatoes from the Madison farmer's market. Ok, fingerling potatoes are my absolute favorite. They're so cute and so tasty!  


Besides being able to use farmer's market fresh goods, this recipe is perfect for the I-only-want-to-make-one-thing-for-dinner meal. It's all in one skillet and it's hearty ingredients make a well-rounded dish! I called it Cowboy Skillet Chicken because it reminded me of what a cowboy might cook over a fire. Well and because the cook book I got it from had a three lined title just explaining the ingredients. Boring. Although...looking at my pictures, I must be a very sophisticated cowboy. There's no fire or spurs or rustic anything. But trust me, this recipe is great for the cowboys or the city dwellers. It's so good.

Adapted from one of my favs, The Cast Iron Skillet Cookbook
(and I hear there's a second edition!!)

Ingredients
1 lb. fingerling potatoes
8 oz. green beans, ends removed
4 Tbsp. extra virgin olive oil
4 chicken breasts
1 c. chopped yellow onion
1 clove garlic, minced
12 oz. andouille sausage, cut into 1/4 inch thick slices
1/2 c. chicken stock
Salt and pepper to taste

Instructions
1. Boil the potatoes in a pot until tender
2. At the same time, add green beans to a pot with boiling water. Cook until they start to soften, about 3-5 minutes
3. Drain the potatoes and beans and set aside.
4. Warm a large 12 inch cast iron skillet over medium-high heat. Add 2 tablespoons of olive oil.
5. Season the chicken with salt and pepper and cook for about 4 minutes on each side. Set aside on a platter.
6. Add remaining 2 tablespoons of olive oil to the skillet and reduce heat to medium. Add the onions and garlic, stir occasionally.
7. Add in the sausage and cook for a few minutes. Add in the potatoes and green beans. Mix all together.
8. Add the chicken over the top, cut beforehand if desired.
9. Add the chicken stock and loosely cover skillet with foil. Reduce heat to medium-low and cook for 12-15 minutes.
10. Serve and enjoy from the skillet!

Vanilla Bean Caramels


Yum, I love caramels. They're sweet and chewy and addictive! Last year around the holidays was the first time I tried making caramels. It can take awhile getting use to your candy thermometer and trusting it. My first ever batch was a bit runny like caramel sauce because I didn't let the mixture get hot enough. Lesson learned.



Luckily, I perfected my technique just in time for Christmas. They were a hit! So, I think it will become a tradition that I bring the caramels each Christmas from now on. This year, I tried a new recipe with less ingredients but I still think it has a great flavor.

What are some of your holiday must-have recipes? A few of ours include peanut butter blossoms, cake balls, and spritz cookies. The best part about these goodies, along with these caramels, is that we really only get them once a year. I think that makes them taste twice as good!

Ingredients
2 1/2 c. brown sugar
1 tsp. vanilla bean paste
1/2 lb. butter
1 c. light corn syrup
14 oz. sweetened condensed milk

Instructions
1. melt butter on medium heat in a sauce pan.
2. Mix in brown sugar and stir until it begins to melt
3. Add corn syrup and stir for 2-3 minutes.
4. Mix in the sweetened condensed milk.
5. Cook to exactly 245 degrees. This may take awhile and you may need to up the stovetop to high heat. The mixture will bubble vigorously for awhile. This is normal.
6. Off the heat, stir in vanilla.
7. Pour into a greased 9X13 pan.
8. Allow to cool, cut, and enjoy!

French Toast Bake


Another recipe for breakfast for a crowd is here again! I think this is the perfect time to give you all ideas on how to satisfy the breakfast cravings of your soon to be holiday guests. Holiday breakfasts are some of my favorite recipes. I just love how breakfast can be such a comfort food and what memories it brings back! Holiday breakfast is especially meaningful to me because every Christmas Eve morning just the immediate family gets together. Of course I love seeing all my uncles, aunts, cousins, and grandparents but there's something I just love about the small, intimate group of Christmas Eve morning.

For Christmas Eve morning, each of my sisters, myself and my parents prepare some sort of dish. Egg bakes are normally the hit of the table, but the spread also almost always includes fruit, monkey pull-apart bread, mimosas and a few desserts (because we don't get enough of those during the holidays). This year, I wanted to find a recipe that didn't fit the traditional ham and egg bake mold. So, off to search Pioneer Woman's website, because does Ree ever leave you disappointed? And then I found it!


This french toast bake is sweet and delicious. It closely resembles regular french toast but the nice thing about it is that you're not stuck in the kitchen flipping toast all morning. You can prepare it all the night before. The next day, all you do is pop it in the oven and voilà! You have french toast for all to enjoy at the same time! Needless to say, I think this recipe will make it onto the Christmas Eve morning table.

Slightly adapted from Pioneer Woman

Ingredients
French Toast
1 loaf crusty french bread
8 eggs
2 c. milk
1/2 c. heavy cream
1/2 c. sugar
1/2 c. brown sugar
1 Tbsp. vanilla extract

Topping
1/2 c. flour
1/2 c. brown sugar
1 Tbsp. cinnamon
1/4 tsp. salt
1/2 tsp. nutmeg
1 stick cold butter

Instructions
1. Grease a 13x9 pan with butter.
2. Cut the french bread into cubes and add to pan.
3. In a large bowl, whisk together the eggs. Next, add the milk, cream, sugars, and vanilla extract. Pour over bread cubes.
4. Cover and place in refrigerator overnight. This step can be reduced or skipped all together.
5. For the topping, mix the flour, brown sugar, cinnamon, salt, and nutmeg in a bowl.
6. Cut the cold butter into small pieces and scatter into bowl. Using a fork or pastry cutter, work in the butter until the mixture resembles corse pebbles. This, too may be refrigerated in a bag or container. Makes things a bit easier the next morning :)
7. The next morning, or when you're all set to bake the dish, preheat oven to 350.
8. Sprinkle topping over the soaked bread.
9. Bake on the middle rack for 45-60minutes. 45 minutes will give you a nice bread pudding texture; 60 minutes will yield a crispy and firmer texture.
10. Enjoy with your favorite traditional french toast toppings: syrup, fruit, powdered sugar, etc!

Brittany's Sunday Brunch

Good morning brunchers! I hope you are reading this under a snuggly soft blanket with coffee and a smile. Because that is how I wrote this! Lately, the littlest things, which sometimes to me seem quite large, have been filling my heart with happiness.

First of all, a few of my latest posts have been published on Foodgawker and Tastespotting! Woohoo! Not always having the most confidence in my food photos and camera, a little reassurance like a published photo on Foodgawks goes a long way. I don't have a professional camera and I have no education in photography so I'd say I'm doing pretty well for myself. I still have a lot of practicing to do (thank you readers for being so patient with me). And maybe someday I'll get a fancy camera to help...but a wedding to pay for comes first.


Speaking of wedding, I'm getting all sorts of excited for that day! Save the dates are sealed and sent! What a difference I feel now that those babies are out. It's like it's finally official now that the guest list knows about it. We also finalized our tasting date and menu. Oh boy. I'm super excited to try out the new menu featured at Steenbock's on Orchard. Also, my dress got moved to Madison! Oh man, it's so hard not to run to our storage unit 5 steps away and try it on. It's a shame I only get to wear that beauty for one day!

What else has me doing the happy dance? Well, I'm a tad ashamed to say it but...I listened to some Michael Buble Christmas songs. I waited until after Halloween and I really wasn't going to but it just happened. And now it's hard to shut it off. But, I'm I really the only one to have Christmas songs playing already? I bet others out there are just as excited for the holidays as me. Anyone have any good Thanksgiving recipes to share? Normally, we each bring a side or dessert and my parents supply the bird. This year, I want to try something new. Here are a few recipes I'm contemplating
I think I'm really feeling a pie...or maybe a healthy side (I think it's the guilt I felt when all I wanted was to devour that peanut butter pie)

S'mores Rice Krispie Treats


When I think of rice krispie treats, I think of marshmallows and when I think of marshmallows I think of s'mores! S'mores just have that nostalgic taste that brings you back to your childhood of bonfires and camping (or at least it does for me). Most people nowadays don't realize that I use to be quite the rugged camper. I'm sure my college friends can't even picture me hooking a worm or going without a shower for a week. But yes, I did that all the time growing up and I loved it.

Ok, back to s'mores and rice krispies. So when this chain of thought brought me to s'mores, I couldn't wait to start experimenting in the kitchen. You see, I thought I came up with some novel idea to combine s'mores with rice krispie treats. I was slightly crushed when it only took 30 milliseconds to find 28 recipes for s'mores rice krispie treats on Pinterest. I was quite embarrassed that I thought I had some evolutionary culinary masterpiece in mind. However, I decided to stick with my original plan and create my own recipe instead of borrowing. Plus, how hard could it be to create a rice krispie variation? I didn't think I could mess this one up.


After my second try (yes, I did screw up on the first try), I was pretty pleased with the outcome. And I'm guessing others liked them too since I already washed the dish they were in! As s'mores and rice krispie treats imply, these dessert bars are sweet and chewy with a crunch. And there is plenty of chocolate to please my craving, so it should satisfy yours as well. Plus, overall this recipe is quick, easy and sure to be a crowd-pleaser.

Ingredients
Crust:
1 1/2 c. graham cracker crumbs
1/2 c. sugar
1/2 c. butter, melted

Rice Krispies:
5 1/2 c. mini marshmallows
2 tbsp. butter
6 c. Rice Krispies cereal

Chocolate coating:
1/2 c. chocolate chips
Any additional topping such as mini chocolate chips, graham cracker crumbs, or sprinkles

Instructions
1. Preheat oven to 350 degrees.
2. In a large bowl, combine graham cracker crumbs, sugar and melted butter. Mix to combine. Make sure everything is evenly coated with the butter.
3. Press crust into a greased 13x9 dish. Bake for 7-10 minutes.
4. As the crust is baking, melt butter in a large pot on medium heat. Add the marshmallows and constantly stir to prevent burning.
5. Once the butter and marshmallows are a nice, smooth consistency, turn the heat off and add the rice krispie cereal.
6. Pour the rice krispie marshmallow mixture over the still warm crust. Press firmly in order for the two layers to stick. *I also melted a bit more marshmallows and put it in between the two layers as glue. I'm not sure how much good that actually did, but worth it if you're not convinced the layers will stay together without it.
7. Let cool for 1-2 hours.
8. Once cool, cut the treat outs with your favorite cookie cutter, or cut into squares.
9. Melt the chocolate chips in the microwave for 1 minute or on low in a saucepan.
10. Dunk the treats in the melted chocolate and garnish with your favorite topping. Place on parchment paper to cool.
11. Let chocolate cool and harden for about 1-2 hours.
12. Enjoy!

Brittany's Sunday Brunch

Hello brunchers! So I was looking back at my Fall list and realized I'm semi-slacking. No pumpkin patch pictures or winery tours. I haven't been all lazy though, some things I have checked off and some fun things have been happening off-list.


Just a few days ago, I spent a lovely evening with great friends, food and drinks. Badger Kitchen and friends met up at Merchant, a local Madison restaurant. Merchant thrives on craft cocktails and fresh, local ingredients. Also, the crafty, upscale tavern feel gives it the perfect ambiance for a meet-up with friends. Laughing over cheese curds, pasta and fruit inspired cocktails was the perfect way to end the work week.



Other non-list activities included wedding fun! My fiancé and I have been having so much fun doing the little things, like picking out our wedding bands and going through boat-loads of stamps as we address our save the dates. Our wedding is finally next in the family so now it's really getting exciting!

But, I haven't forgotten about my list, guys. Don't worry. Cooking with fall flavors has been checked and rechecked off the list. But that was a give-in. Yesterday, we did one of the things I enjoy the most that's on the list; we went to the dog park. Not only do we have one happy off leash camper, we get quite the beautiful view to admire over, too. Even if you don't have a dog, I highly recommend visiting Indian Lake north of Middleton. They even have non-dog park walking trails if you're self-conscious without a dog. Trust me, it's worth going this time of year. To convince you all, I let go of my self-consciousness and posted this picture of a very tired me with no makeup. It's totally worth it.

Pumpkin Pound Cake


I could start this post taking about how much I love pumpkin and how when baking this recipe I was drinking pumpkin spice flavored coffee and had a pumpkin scented candle burning, but then this would sound like every other wonderful pumpkin blog post out there. When it comes to fall, who doesn't like pumpkin [cough, besides my fiancé, cough]?

Earlier in the summer when Badger Kitchen was thinking up the coming months' themes, pumpkin just couldn't be overlooked. But come October (ok, ok I was thinking about this since September), I just couldn't decided on a recipe to try. I really wanted to step out of my comfort zone and try something, non-baked good recipe. You know, get away from the traditional cinnamon, nutmeg, pumpkin trio recipe. But I was afraid of not liking it and my fiancé not even trying it. So, baked good it is. However, I've never had pumpkin pound cake before. I was pretty excited when I found this.



This recipe is super easy. Believe me, I made this after a very long wedding weekend while finishing up scientific figures for a grant and doing laundry and keeping the dog occupied. It reminds me of banana bread in the fact that it's really good without much effort. Also, this pound cake has the texture like banana bread in that it's dense but [dare I use the word] moist. Also, that cup of pumpkin goes a long way! I was afraid of it being bland but this pound cake is far from! The only thing I would do differently next time is maybe add a walnut or oatmeal topping to give it more texture diversity.

Ingredients
1 1/2 c. All Purpose Flour
1 tsp. Ground Cinnamon
1/2 tsp. Salt
1/2 tsp. Baking Soda
1/2 tsp. Baking Powder
1/4 tsp. Ground Cloves
1/4 tsp. Ground Nutmeg
1 c. Granulated Sugar
1/2 c. Brown Sugar
1/2 c. Vanilla Yogurt
3 Egg Whites
1 c. Canned Pumpkin

Fall sprinkles optional (but why not? After all, it is cake)

Instructions
1. Preheat oven to 350 degrees. Grease bread pan or mini loaf pan.
2. Combine flour, cinnamon, salt, baking soda, baking powder, cloves and nutmeg.
3. In a separate bowl add together the sugars, yogurt and egg whites. Mix until blended.
4. Fold pumpkin into the wet ingredients. Then add the dry ingredients. Stir just until all is blended together.
5. Pour into pan (should make about 8-9 mini loaves).
6. Bake for 60 minutes if large bread pan or 25 minutes if mini loaf pan.
7. Enjoy!

Brittany's Sunday Brunch


Fall is my absolute favorite season! It took me awhile (and a few Pumpkin Spice Lattes) to get into the Fall mode, but now I'm happy that summer has turned to fall. We're still getting some warm days and many of the trees are still a lush green. However, I'm hoping that means this Fall will be nice and slow. Believe me, I'm TOTALLY not ready for winter yet. C'mon, I just got use to it becoming fall.

Since it officially became Fall this past Tuesday, I came up with a list of Fall Things I want to do.
  • Visit an Apple Orchard or Pumpkin Patch. Anyone have any favorites in the Madison area they would suggest?
  • Take a drive out to Wollersheim Winery. One, because I love wine. Two, because I love Wollersheim wine. And three, the county side drive should give us a chance to see colorful landscapes. 
  • Visit the dog park often. Bear, as shown above, can't do much in the summer with his thick, black coat. But now that the weather is much more comfortable for him, we can get his dog park fix in! And the view at Indian Lake is pretty gorgeous!
  • Bake and cook with my favorite Fall flavors. I hope to make a savory pumpkin recipe. I always make pumpkin desserts, I think it's time to try something new. Also, crockpot applesauce is calling my name, it looks so easy!
  • Enjoy our fireplace. We recently moved to a new apartment (well, we really just moved down the hall) and it has a fireplace. I can't wait to cozy up next to it!

Loaded Baked Potato Rounds

Oh boy do I have a great recipe for you today! Our September theme of football munchies is rolling in once again. These potatoes are sure to be the hit on the appetizer table on football Sunday, or my favorite, Saturday! Go Bucky!


These salty, cheesy, no fork needed snack are the perfect pop-able food to serve next game day, I know I will. Funny thing, when I was testing this recipe out, it was just me and Mr. Bear (haven't been acquainted with Bear, check out here or here). No party and actually no game to watch. I ate them while watching Bride Wars. Yeah, not even close to a sport. But they tasted so good, I think I'll have to make them again this weekend.


This recipe is super easy and probably impossible to mess up. It's really up to you to add what and how much of ingredients you want. For me, I doused on the pepper. The recipe didn't actually call for pepper, but it's my other half when it comes to cooking. I just can't leave it off. Also, I realized I have never cooked bacon before. Ever. Seriously, I have always left the bacon cooking to the experts. Well, my expert wasn't around so I had to try it out myself. Little crunchier than I like but it was perfect on top of the potato rounds. So trust me when I say you can't mess up this no-fail potato rounds appetizer!

Ingredients
Red potatoes
Bacon
Green onions
Cheese
Olive oil
Kosher salt
Pepper

I didn't actually use specific measurements, it's really up to your personal liking

Instructions
1. Preheat oven to 400 degrees.
2. Slice potatoes and place in a large bowl. Add oil and toss to coat entire surface of potato rounds.
3. Line cookie sheet with parchment paper and spread potatoes out in one layer. Sprinkle salt and pepper over potatoes.
4. Bake for 15 minutes, flip and bake for another 15 minutes.
5. While potatoes are baking, cook bacon.
6. Chop green onions and bacon to small pieces.
7. Once potatoes are golden brown, sprinkle cheese, onions and bacon. Bake another 5-10 minutes.
8. Enjoy!

Brittany's Sunday Brunch

To end summer with a bang, my fiancé, friends and I drove all the way down to Houston, TX to see the Badgers take on the LSU Tigers. Although the outcome wasn't what we wanted, the trip was still a blast. 


However, if you asked me to do it again I'd say no. I would much rather fly. The 20 hour drive...eh, not my style. But the hardest part about the trip was leaving this guy.


This is Bear, our one-ish year old Bernese Mountain dog. He was in good hands at Grandma and Grandpa's but oh boy was the reunion a mutual happy, snuggly time once we got home.

It seemed as soon as the trip was over, the weather became a very comfortable low 70's and the first day of school came. It was like a fall switch turned on. I'm not quite ready for fall but I got out our decorations (not Halloween, that would take it too far) to help get me in the new season mood. I still may not be ready for fall quite yet but I'd have to say fall flavors and recipes are my absolute favorite! Pumpkin, apple, cinnamon, yum! Football favorites like chili, beer-boiled brats, and pulled pork! I just can't get enough of fall food!

Brittany's Sunday Brunch

Good morning, Sunday brunchers! Nothing too exciting to report, so I'm just going to list random things that have happened or have been on my mind.
  • I love everything mini! Our wedding venue has the option of serving mini almost anything as a late night snack. Just picture mini quesadillas and mini burgers with mini pizza slices. I'm dying here. So, spend the money on late night snacks or on more and hot appetizers? That is the big question on hand.
  • And now, to continue with the everything mini theme that I'm currently gushing over. I used my petite loaf pan for the first time this week. I got it as a gift and I'm so in love! Look at how cute these banana breads are! I can't contain myself.


  • Want the banana bread recipe? Find it here! Using a petite loaf pan too? The full recipe will make 9 mini loafs but reduce the cooking time to 25-30 minutes.
  • I can't stop there! So when making my mini loaves, I couldn't help but use mini chocolate chips with my mini spatula. Seriously, don't laugh at me. That mini spatula comes in handy more often than not! Trust me, now when you're in the kitchen trying to scoop out the last of your pasta sauce from the jar, you will be wishing you had my mini spatula. [I found mine at a local store, Orange Tree Imports, but I've seen them at Williams-Sonoma and every once in awhile at Target]. 

And as we said this morning in yoga class...

Caprese Pasta

If you haven't heard from last Wednesday's post, August is tomato month at Badger Kitchen! Get excited gardeners, farmer's market goers, and tomato enthusiasts. This month we're featuring delicious recipes where the tomato has the starring role. This time of year, we find ourselves with tomatoes up to our ears! So look no further to find your next exciting recipe before you decided to cut that tomato up to just toss it into your side salad. C'mon now, your tastebuds are craving something new!


When I found this recipe at How Sweet It Is, I knew exactly how I was going to use it. I made it on a Sunday afternoon because it's a pasta dish. And pasta dishes warm up nicely as leftovers. So, it was going to be my go-to lunch for the coming work week. Yum, my lunch breaks were the highlight of the day. Oh and I had some gakwers this week as the aroma of basil filled the break room. 


Basil has to be one of my favorite fresh herbs. So delicious and it really is one of the main elements in this dish. Well, it is caprese pasta, after all. But surprisingly, my favorite part of this dish is biting into one of the juicy tomatoes. Just cooked enough, they add a refreshing burst of goodness amongst the mozzarella and noodles. 


Ingredients
1/2 box noodles
1 c. pasta sauce
1/3 c. half and half
1/3 c. parmesan cheese, grated
4 oz. mozzarella cheese, grated
1 pint grape tomatoes, halved or left whole (whatever your liking is!)
1 bunch fresh basil leaves, chopped
Extra cheese for garnish

Instructions
1. Preheat oven to 350 degrees.
2. Boil pasta, following directions on box.
3. Heat pasta sauce, half and half, and parmesan cheese in a saucepan over low heat. Stir occasionally.
4. Once pasta is done cooking, drain and place in a large bowl. Add mozzarella, sauce, tomatoes, and basil. Toss to combine. 
5. Place into a buttered 8X8 dish and garnish with more cheese, if desired. Cook in the oven for about 20 minutes. I love some extra crispy bites of cheese and noodles so I also broiled my dish for about 5 minutes at the end. 

Enjoy right away or as leftovers!

Brittany's Sunday Brunch

These past couple weeks were crazy busy! I felt I always had twenty million things on my mind, fully disorganized and cluttered. As a result, I feel today's Sunday Brunch will reflect that quite seamlessly.

  • Last weekend I picked up my wedding dress! Oh boy, I still absolutely love it. I had to resist taking any pictures; otherwise I wouldn't be able to keep myself from posting them here or ruining the surprise by showing my hubby-to-be. Southern Wisconsin ladies, check out Bliss Bridal if you are looking for a wedding dress. They treat you like a princess and the decor of that place is oh so lovely.
  • Part of being busy lately is from all the visitors. Best part of out of town guests is having an excuse to eat out. My recently food ventures included: 
    • Bluephies on Monroe Street. Even after stuffed bellies we split the Snicker's Pie. Yum.
    • Clasen's Bakery on Parmenter Street. Oh boy, we have discovered one of the best bakeries in town and it's in walking distance from our apartment. Yikes, I'm afraid their cinnamon rolls might become a weekend breakfast staple.
    • Basset Street Brunch Club. Brunch with my coworkers to get out of the lab, yes please! And don't forget their doughnuts. We took them to-go as a work snack for later!
  • On top of wedding vendor meetings, I've been busy babysitting, attending work meetings and meeting work deadlines. How should I stay organized so I don't forget anything? Icloud calendar has been a dream come true! If you're not a Mac fan, then try google calendars. If you have a gmail linked to your smartphone, the calendars follow with it! Pretty nifty. But I also like the good ol' fashioned hand written schedule. My calendar comes from Sugar Paper Los Angeles and it's feminine cuteness looks great in my work bag.
  • Restaurant week was this past week. Please share your favorite place and meal. And if you missed it this year, don't worry! It's semi-annual, so there's another one this winter. But let's not talk winter now, summer is just too great.

Dark Chocolate Sorbet

Welcome back to frozen treat month! All of July Badger Kitchen will be featuring frozen treats, just in time to help cool off in the summer heat! Although here in Madison it's a bit on the cooler side this week, this chocolate sorbet will be perfect for when the sun comes out this weekend!


I'm not going to lie, I was a bit discouraged with this month's theme. I pouted to my fiancé that I wouldn't be able to pull off a good frozen treat without an ice cream machine. I joked around to him saying that if this recipe didn't work, I was going to buy frozen sorbet from the store and take pictures of it as if it were my own. Luckily, that was not the case. This recipe proved my pessimistic self that even with simple ingredients and simple kitchen tools, I could pull off a pretty darn good frozen treat!


This dark chocolate sorbet is not like normal fruit flavored, refreshing sorbet, but I can tell you it will still be a hit! It has a rich, intense chocolate flavor that pairs nicely with its creamy, cold texture. And as an added bonus, it's dairy free! Anyone lactose intolerant or who chooses to eat dairy-free, this is an excellent alternative to ice cream. Get your spoons ready!

Recipe from King Arthur Flour

Ingredients
1 c. granulated sugar
2/3 c. cocoa
pinch of salt
1/2 c. semisweet chocolate chips
2 1/4 c. water
1 tsp. vanilla extract
2 tbsp. vodka

Instructions
1. Combine all ingredients, except vodka, into a saucepan over medium heat.
2. While stirring often, bring mixture to a boil allowing the sugar, cocoa and chocolate chips to dissolve.
3. Once everything is dissolved, transfer to an 8x8 dish and freeze for 2 hours.
4. Using a spoon or fork, stir mixture around and bring the frozen crystals to the center of the dish. Return to freezer and stir mixture around every hour or so until sorbet is nearly firm.
5. Add the vodka and mix again. Transfer sorbet to a container and cover. Continue to freeze until it is firm to your liking. I allowed it to freeze overnight.
6. Serve with your favorite fruit or ice cream toppings!

Brittany's Sunday Brunch

Doesn't today feel like you woke up and get to relive yesterday? I feel I should be getting ready for work! This long weekend has been great...but quite different than my normal 4th of July agenda of watching fireworks, eating brats and sunbathing on the boat. This year, it was more wedding themed.

Since we officially booked our ceremony and reception site, we have had wedding fever (yes we, my fiance loves to stay in the loop and help me and my indecisive nature pick wedding things)! It's been so much fun. 

On the Wedding To-Do this weekend:
  • Start a wedding website. We chose to use The Knot's website template. It's been working out nicely!
  • Order save the dates from Wedding Paper Divas (we had a persuading coupon). We decided on a simple flat sheet with one engagement picture and feminine font. It's perfect!
  • Register!
  • Celebrate checking things off the wedding to-do list!
Registering was so much fun. We both still use our college-day items (that were hand-me-downs when we got them then). It will be exciting to have the chance to get some good quality stuff. What's the bulk of our registry, you ask? Kitchen goodies and dinnerware, of course!

Before going to Pottery Barn and Macy's, I made sure to have ideas in mind. This article and this one helped to make registering less stressful.

Big Items on our Wish List:
  • All-Clad cookware set
  • Kitchen-aid stand mixer
  • Chicago Cutlery set
Smaller but just as exciting items on our Wish List:
  • Hand-held mandoline 
  • Digital meat thermometer 
  • Baker's blade
Once we got things done on the To-do list, we made time to reflect on how much fun we were having and on the more important part of the wedding: becoming Mr. and Mrs. We did this by having an impromptu dinner date at my new favorite place, Coopers Tavern. Want a delicious meal paired with the perfect tap, all with a beautiful view of the Capitol? Then go there. We also took our time walking the square after dinner and then the next day at the Farmers Market. Ever try a pastry from Graze? The above picture is me trying their chocolate croissant for the first time. It was quite the buttery, yummy treat! There was even an accordion player next to us while we ate. It felt like we had traveled to Europe! 

Overall, our 4th of July was far from traditional but very fun. I hope you all had a fun and safe Independence day!
